Sure. Check out any good book on Apple Script.
It is possible to use Apple Script from Shell, Python, or Perl Scripts
I have source code for projects across multiple folders that are
shared by multiple projects.
I've found <http://www.axamblis.com/xcodeassistant/> which works
well, but I'd prefer a faceless command-line app.
The idea of passing *.(mm|m|c|cp|h) in folders is unappealing
because some of those files aren't used by my project. The idea of
passing the path of every source file is equally unappealing
because I don't want to keep a file list up to date manually.
