There's nothing in Xcode to do this automatically. In fact, I'm not aware of any IDE that does this automatically. I'm still amazed that after all these decades, C programmers still have to waste time maintaining .h files. But I digress...
I wrote a tool for MPW that does this. I later coerced CodeWarrior to do the same. If you're at all interested, I can try to dig up the source code. It's vanilla C so it shouldn't be too difficult to get it compiling again and integrated into an Xcode project. Maybe others might be interested.

I believe this is a feature of Xcode 3, which is part of Leopard. If you get a paid ADC membership, you can get the Leopard seed and play with it. But you can't discuss it on the list, since Leopard is still under NDA.
If you want to stick with Xcode 2, check out the latest version of BBEdit which has also added code folding to its immense set of features. BBEdit will integrate with Xcode.
