I've just acquired a Mac Mini (Intel) & am trying to get familiar with XCode.
I downloaded a sample app from O'Reilly - A Bitmap Image Filter.
So I've now got an XCode project - ImageApp4 - which produces a working Intel App.
Great - now a simple task - produce a Universal Binary to run on my G3.
So I just edit the Project setting ARCHITECTURES and check both PPC and i386.
Now another Build and - still just an Intel Application !

Just a guess, by default the development/debug configurations default to native. You need to either switch to the release/deployment configuration or make sure you are editing the settings for the configuration you are using.
