Peter,

I suggest the following:

-Cocoa Programming for Mac OS X (Yes you will learn
Objective-C, but believe me, you CAN teach an old dog
new tricks, and you'll pick it up quickly)
-Beginning Xcode by James Bucanek (there may be
better, but this has been helpful to me)
-The Apple developer web site; specifically search for
and download the PDF "The Objective-C Programming
Language" this will supplement the Cocoa book and give
you a little more detail about Objective-C

I'm actually doing all this *right now* myself, and
have found these sources (including this mail list)
very helpful. Give it a try, come on, all the cool
kids are doing it ;)

Good luck!

Chris
