This was just opening Xcode!!!!!! after a fresh install. I did try
removing the ~/Library/Preferences but did the same thing.
I think Xcode is confused as to what platform it is on b/c of the
'<unknown>'. Does anyone know how to set up what platform it is?

Was this seen when opening an Xcode project? Just Xcode itself? If
the former did you try with a newly created project?
Anyway try removing the com.apple.Xcode.plist (IIRC) found under ~/
Library/Preferences (save the file, if it is that cause Apple would
maybe want to know what is bad about it).
