Maybe you can try to launch Xcode with CoreData debugging enabled to
track where the bug occurs.
You can do this by launching Xcode from the terminal like this:
arch -i386 /Developer/Applications/Xcode.app/Contents/MacOS/Xcode -
com.apple.CoreData.SQLDebug 1
You will probably be able to determine which request make it crash.
You can also try to update your docsets. Drop them in the Trash, and
then ask Xcode to redownload them. (Open the documentation windows,
and use the little gear bottom at bottom-left to check updates and
display hidden doc sets).

I tried to remove one, relaunch, remove the other one...
Same result. If one of them is there, crash :(
If each documentation set, there is a "docSet.dsidx" file that
appear to be a SQLite database. There is probably one of them that
is corrupt or locked or something like that.

No Finder Lock.
