I recommend going to http://developer.apple.com and searching for "Mac OS X Technology Overview".

That document will give you a better idea of the lay of the land for OS X development.

There are also plenty of Cocoa and Carbon tutorials and sample applications on http://developer.apple.com.

Browse around and see for yourself.
