There is the Installer/Package Maker. Off the shelf, it does not
update from binary diffs, I am not sure if that could be implemented
there through plugins or scripting: http://developer.apple.com/documentation/DeveloperTools/Conceptual/PackageMakerUserGuide
A seperate list exists for questions about installer.

P.S.: The Mac Folks don't like if their machines are spelled MAC. We
are weird that way.
