An explanation....
I received a reply from Philip Aker off list reminding me that the
Project Info also has a "General" tab with a field where the Build
Products Path can be specified. I opened up my Time Machine backup
file from this morning and indeed found that I could control what was
displayed in Project Info from this field.
So, it looks like an explanation for this is that there are five
places where the Build Products Path can be set, and I only checked
four of them.
Build Settings tab of Target Info (the "Target Layer")
Build Settings tab of Project Info (the "Project Layer")
Preferences ► Building (the "Application Layer")
xcconfig file
General tab of Project Info

So I sent a "Document is missing information" report to Apple
regarding Xcode User Guide's chapter 33, "Build Setting Evaluation".
Looks like they need to add another "Layer". _______________________________________________
