From the searches I've done, it seems a bit complicated, I thought there would have been a 'rename project' command.

First rename your project bundle.
And then, as xcode projects are just xml files, you can probably do a "find & replace" in the "project.pbxproj" file that is in your ".xcodeproj" project.
This is just a guess and I did not try it, so backup your original project before the change.
