Just exactly how do you get unixdev back?

There is no reason to need /Developer when you have / Developer_XCode3.1.1 is there?

But the iphone SDK pkg which includes XCode3.1.1 doesn't reinstall unixdev right?

It install it only if you ask it to do so. Make sure you check the corresponding package checkbox in the iPhone SDK installer.
