I think the main difference is on the filesystem. A dev device is likely to have /Developer on it, which by analogy to desktop OS X, probably contains things like the debugger stubs, CHUD tools, ad hoc installer (as opposed to AppStore), symbols?. I think it also allows dev profiles to be recognized? Hmm.. (Just guessing here)
The only way I’ve been able to get a phone in un-development mode is to utterly zap the firmware and delete it from Organizer.
Wonder if that’s all there is to it? “Dev Mode” means that the device appears in Organizer when plugged in. Unfortunately I don’t have enough iPhones around, and all the ones I have are for test/demo, “stable reference” development platform and “bleeding edge” platform (betas, for instance, if available).

Xcode automatically detects a new iPhone connected to the MAC and opts the user to set the phone to development mode. Is there a way in Xcode to go back? I wanted to install sample applications, but wanted to go back to non development mode after installing sample applications.
