I don't think I fully understand what the issue is. In what way is the "development mode" different from "non development mode"?

Xcode automatically detects a new iPhone connected to the MAC and opts the user to set the phone to development mode. Is there a way in Xcode to go back? I wanted to install sample applications, but wanted to go back to non development mode after installing sample applications.
