Well, today I went ahead and upgraded a few of the build machines to 3.1.3, and still no dice. I can ping the machines, I can see them on Bonjour Browser broadcasting xcodedistcc, and as far as I know, the xcode and os x versions match...But when I open the distributed build panel of the xcode preferences, no machines show up in the hosts panel (when sharing via distcc and bonjour selected).

The exciting conclusion: I forgot that at the same time as switching xcode to 3.1.3, I changed it to run in 64-bit as opposed to 32-bit (in the .app info pane). Apparently that's what broke everything. Switching back to 32-bit, I can see all the bonjour discovered build hosts, and can connect to the ones with the same versions of xcode.
