| Also, it's easy to change the icon for any file. Go into Finder, do Get Info on the file. In the upper right corner is the file's icon. You can click the icon to select it and paste whatever image you want to replace it.

I would try removing the Xcode icons from the Dock, renaming the apps to Xcode 2.5 and Xcode 3.1 (or whatever) and then re-add them to the Dock.
