There's a bunch of common sense with that one:

1) Unreleased OSes will be beta.
2) Betas will have bugs, some minor some major
3) Some major bugs may cause the device to not function in a manner that is critical to "everyday use"*
4) If you require a device functions properly for that "everyday use", don't install pre-release software on it (especially since it is usually not possible to downgrade to previous versions)


*Everybody's definition of "everyday use" will be different.


Personally, I bought an iPod touch to run betas of 3.0 on it, because I didn't want to risk not being able to use my phone (and there were no phone specific features in 3.0 that I required).
