Aaron Hillegass's "Cocoa Programming for Mac OS X" is a good way to
get into Mac programming as a whole. It covers Xcode incidentally to
programming, just as my book covers Mac programming incidentally to
Xcode. Make sure you get the latest edition.
The x3u website includes a slightly old list of other resources,
including books.
