You're missing that xcodebuild was 32-bit only before Xcode 3.2.
The real question is: what are you hoping to accomplish by forcing
xcodebuild to run with one architecture over the other?
But, the release notes for Xcode 3.0 & 3.1 state:
The xcodebuild tool never runs with garbage collection. It can be
run in
64-bit mode on 64-bit hardware with the command arch -ppc64
xcodebuild
or arch -x86_64 xcodebuild
Why would the releases notes say this if it was not true (and it
doesn't appear to be true)?

Hoping for an easy way to get around the following build error:
GenerateDSYMFile /path/to/my.app.dSYM /path/to/my.app/Contents/MacOS/my
***terminate called after throwing an instance of
'std::length_error'
*** what(): basic_string::resize
