What will I need to download (or get a friend with better connectivity to download)? Will I get 3.2 or 3.2.1 out of the box?

You'll definitely get Xcode 3.2. You might have to run System Update to get 3.2.1. (Same goes for the OS too, of course — it'll probably be a while before the retail boxes come with 10.6.3.)

Do I need to get a documentation update? If so, where?

Xcode will update the docs automatically. I'm not sure exactly where it gets them from.
