Mmm? I've never seen an Xcode update on System Update. Is there a special case for versions installed from the OS DVD?
Otherwise I'd recommend
• Getting an "online" ADC membership and downloading from connect.apple.com.
• Paying $99 for the Mac developer program and downloading from developer.apple.com/mac
• Paying $99 for the iPhone developer program and downloading from developer.apple.com/iphone (the only way to get the iPhone headers/libraries/tools, includes Mac SDK).
Also, Apple is releasing a new platform on Saturday. You may assume it has a new version of the iPhone OS. Historically, these have been accompanied by revisions to Xcode. It might behove you to wait for the download till Saturday or Sunday. This would not affect what you get on the Snow Leopard DVD.
