yes, osascript does the job, but it's a bit clumsy to pass along variables, etc.

I don't think so, because I haven't seen any case where Xcode shows information about the progress within an individual build command.
2. execute the script in an external Terminal.app, to monitor its progress.
You can probably make your shell script use the 'osascript' command to send an AppleEvent to Terminal telling it the command line to run. I don't think there's a way to have it block until the 'scp' command finishes, though.
