I have installed Xcode 2.5, which still contains the samples. That said, some of them don't compile under the 10.6 SDK (which is probably the reason why they are gone).
But I will gladly send you my 10.6 compatible version, if you like

The Voyeur sample app that Alexander mentioned definitely seems to have gone AWOL. I was looking high and low for it a few days ago to no avail :-(
