If you run two copies of Xcode in the same user session
(using open -n from the command line), does the world end as we know it?
It might be prudent to open a copy of the project in the second copy of
Xcode. For that matter, can Xcode open two different projects (i.e. the
original and a copy) and debug each of them to a different device
simultaneously? I bellieve you can do this to debug two copies of the same
program where no devices are involved.

No, this is not
supported.
You could try setting up your Mac to have multiple users,
running separate copies of Xcode for each user, and having each copy connect to
a different device, but you won't have both Xcode debuggers on the same screen
at the same time, which I expect s what you want.
