3.2 made some changes but the options are still there for the most part. A .xib is an XML version of a .nib, which helps when using version control. The newest book I know of is Cocoa Recipes for Mac OS X, by Bill Cheeseman and there is a book on XCode itself called XCode 3 by James Bucanek.
It can be frustrating when you are trying to learn but if you just poke around a bit, you should be able to piece it together. I think you'll learn more that way.
