As for the failure of IB to show project classes, that remains unexplained. But for now at least I can move forward.
Working through the "Cocoa Programming for Mac OS X" examples I ran into the same problem. Adding a class file to the project and then opening IB leads to the classes not being in the IB interface. I have to manually read the class files. I have not found any other solutions (I have not looked to hard). I am using a standard XCode and IB install from the Apple site and I have not changed any of the standard preferences (I have not gotten that far into the learning curve yet).
