I don't think he didn't know about the keyboard shortcut. Probably he
didn't at that moment. If he didn't, he will know someday.
He is just talking about how inconvenient the new approach is.
I use keyboard shortcuts a lot, but I can't remember all of the shortcut
always. Sometimes I am confused with those of Visual Studio, and even
with the previous version of Xcode. ( With Xcode 4, many shortcuts broke
the simple shortcut "implicit" rule on Mac. "Make the first character of
the menu item for the short cut the short cut key." There were some
which don't abide by that with Xcode 3, but what I mean is that it is
broadened. As a long time Mac user and programmer, I preferred Mac to
Windows. One of the reason is its shortcut. )
Also, whether you use shortcut or not, you are end up folding/unfolding
the window repeatedly.
I'm sorry to tell this, but can we read between the lines?

Ok, I can split the narrow window. Click the pill to retrieve the toolbar. Click the Assistant Editor button to split the window. Click the pill to hide the toolbar. Resize the window narrow, again. Yeah, it works. Kind of cumbersome to get there (compared to clicking the split button in Xcode 3), but I finally put the pieces together to get there.
Have you reviewed the "keyboard shortcuts for opening files in assistant editors" section of the Xcode 4 transition guide? There are many different ways to open new splits that would be faster than what you described above. Hint, hint...
Note also that there are keyboard shortcuts and menu items for all of the things that you controlled from the toolbar in your example above.
