If your project has a bunch of C++ files, that can easily cause the memory use to explode. In general, 1GB is pretty anemic for a development machine. The base configurations of all Macs these days is at least 2GB.
In general, the more RAM the better.
A Mac Mini + 8GB would do quite well. Or do I have to shell out $2k+ and buy a mac tower?
The iMacs are fantastic development machines. I have a 27" iMac w/16GB that is flat out awesome for dev work. Beautiful screen, too. It is the previous generation, so I can use it as a monitor for my [work provided] 13" MacBook Pro (the new ones can't do that, but ThunderBolt means epic fast external storage is likely in the near future-- a number of external TB drives have already been announced by LaCie and others).
