Looking up keyboard shortcuts from memory can be slower than moving the mouse to the menu and selecting the item (this is classic UI research going back to Bruce Tognazzini's days at Apple in the 1980s. The thing is, it feels faster even though it's slower, because you don't notice the time your brain is active on the task of remembering the keystroke, where as you do notice the time spent moving the mouse.)
I'm not familiar with the relevant research, but intuitively it always seems to me there's a 'diminishing returns' aspect to keyboard use. I use the mouse/trackpad for new things until I notice the frequency of performing a particular action makes it a nuisance. In that case I'll learn a shortcut and make sure I use it until it becomes automatic.
I can imagine a tool that measured the frequency of actions, and suggested keyboard shortcuts for those that passed a certain frequency or duration threshold. But that might trigger a few too many Bob/Clippy nightmares.
