As Jens suggested, you should sample Xcode to find out what it is spending its time on. However, my gut tells me that this is known issue. Do you have any iOS 5 devices on the same network as your Mac? Do they have wireless-synching enabled in iTunes? If so, then this is likely an issue that was fixed in Xcode 4.2. However, a sample will confirm whether or not this is the same issue or not.
