I had this with my iOS project, so you're not alone.
Connect an iOS 6 device, and it picks that up as the default, as I'd expect. Since I don't use the simulator, and I mostly use my iOS 6 device anyway, I've just put up with this. Not sure how much help this information is to you, but luckily it's worked for me (since this particular misfeature, minor as it sounds, is maddening in practice).

P.S. I only have one iOS 5 device, so I'm assuming this is due to the iOS revision and not something else.
