Other than some compatibility issues with much older versions (10.4, PPC), I can still build for 10.6 using Xcode 4.5.x. Set the SDK to the current version, but set the target OS to be 10.6.
The only thing you have to be careful of is to make sure not to use an API introduced after 10.6 without first checking whether the API is available.
