For distribution, the (simplest) answer is yes. One for ad-hoc (beta) distribution (iOS only), one for App Store distribution, for each application.
For development, no. You can use the "Team Provisioning Profile" Xcode installs automatically. (You are using the Refresh button in the provisioning-profile list of the Devices organizer, right?) This is how you "get an app onto your iPhone."
If this really is going to be the first time you run the app on your phone, you are in for many nasty surprises. The Simulator is not an iPhone, and many apps that work on the simulator will crash on a device. You have to install and test the app on a device from the start.
