It took a while, but changing the Document Versioning of the storyboard file to something else, then changing it back resulted in the inspectors working again.
Would be nice to find out what triggers this behaviour so that it can be fixed for real. Something like this is really frustrating when even a quit and restart of Xcode doesn't resolve the issue.
