Your documentation-fu is better than mine, that certainly spells out the requirement. I didn't remember it was just for NSView subclasses.
Would be nice to have at least a little bit of customisability in Xcode, perhaps not the full IB plugin again but something.
I'll file a docs bug against that document, the last update was for 10.7 (to add a binding) which was Xcode4 already. That sounds right. (Except that it was the plugins that were sad, not their demise. Unfortunately, this was a highly desirable piece of technology that had no truly feasible implementation in IB/Xcode, especially when considered across *versions* of IB.) I had the feeling it required an IB plugin to make it all work, but don't entirely remember.
"By exposing the bindings that an object supports and creating an Interface Builder palette, you can make instances of your own classes bindable in Interface Builder.” That certainly seems to be about IB plugins. (The document was last updated in 2011.)
