I’m confused. I doubt your problem is what you assume it is.
Did you try to insert an image (such as a screenshot) between “says:” and “The iPad?” That rarely works on this list. Can you give us the text?
What do you mean by “listed under SDKs in XCode?” Where do you find this list?
In Xcode, choose the command Xcode > Open Developer Tool > iOS Simulator. In the simulator, select iOS Simulator > About iOS Simulator. What version number do you see?
The same with Xcode > About Xcode. What version do you see?
Yes, you’re sure you know the answers already. But if the answers are what you assume, then Xcode is working perfectly for you.
Or just download Xcode 7.1 again (developer.apple.com/downloads, uncheck everything but Developer Tools, if you’re a developer-programs member) and replace your existing Xcode.
