I can't even figure out what version of the books I have on my Mac — they don't have any version info or even a copyright page (which is weird; I would expect at least a CC license. Other Apple books come with copyright notices.)

It sounds like you're following the correct procedure but found a bug in iBooks, which you should report to Apple.
