Adding a key to a Plist file?

Hello all,
I feel like this should be obvious, but how do you add a key to a plist file? I see a table of existing keys, but no add/remove buttons. The help says to hover over the list, but when I put my mouse there, nothing happens. I tried “add row” from the context menu, but couldn’t change the key, type, or value once the new row appeared. Is there a trick to this, or is it just inaccessible? Thanks.
