No, this did not happen to me. Could there be some kind of ‘auto update’ flag set somewhere in your preferences?
Xcode has never updated itself ‘auto-magically’ on any of my machines (4 of them, running 10.6, 10.8, 10.10, and 10.11) - and this includes Xcode 7.0 and 7.01 - I have always updated manually, so to speak…
And I have not experienced any of the many problems brought up here during the past few days. Xcode 7 is working like a charm on projects here - which include a bunch of 32-bit QT aimed at 10.6, and a lot more recent stuff aimed at 10.10+
All OSX, no IOS - maybe there’s a difference?
