SSD == requirement. Total night and day performance difference with Xcode.
8 GB of RAM is the minimum in my book, 16 is what I prefer.
Honestly, I have a 2011 MBP with an SSD, 16 GB of RAM and it's awesome.
Daily, I work on a new MBP 15" with an external display, but have worked on mac minis with SSDs and 8 GB of RAM over the last 3 years and they are certainly fine if they have a fast HD or SSD.
You'll need screen real estate. 2 monitors is a must.
You CERTAINLY can purchase any iMac within the past 3 years, plop in an SSD and max the RAM and attach another display.
IMO, any Mac within the past 3 years with an SSD and maxed RAM will be awesome.
