I haven't tried to download Xcode 7, but when updating to El Capitan on a test machine, I see a similar problem.  The App Store (in Yosemite) just says "Downloading," with no actual progress shown.  However, the progress is shown in the Launchpad.  (And I also see storedownloadd in the Activity Monitor).

So I'll bet that the Xcode download shows up in the Launchpad as well.
