Correction.
They are not deleted outright, but also they are not moved into unassigned. They are moved into a completely different folder and into a different imageset, which is strange because it appears that the image vanished if you are looking at the launchimage imageset you are editing and/or if you are looking at the folder payload in the Finder.
You have to now search your assetlib for where this other launchimage might be find the items that were the ones that Xcode moved and move them back into your desired launchimage imageset.
It's a massive waste of time to create lanuchimages in Xcode 8.1. Please use Xcode 7.x if you need to create launchimages. In Xcode 7.3 this area it the UI doesn't make it harder to get your job done.
