I still would like to know, how to obtain those paths but this information
resolves the issue of the project windows not restoring.

I haven't looked for Xcode recent items prefs, but I'm not sure why Xcode isn't
re-opening your projects. Mine does. What's your System Prefs->General settings
for:
-Ask to keep changes when closing documents
-Close windows when quitting an app
Mine are on and off respectively.
