We very rarely run a single instance.

Is there any advantage in running more than one instance on the same server?


Advantage? We only run a single instance if we are desperate for memory! Running multiple instances allows you to process higher loads (EOF is only single threaded within the instances) and provides for much better availability. With only a single instance, if you recycle it your site is out until it restarts. As single instance is only for memory starved machines and very low traffic sites.
