Setting default syntax for a new file extension?

A co-worker of mine is editing a bunch of configuration files with the extension ".gyp", and wants Xcode to syntax-highlight them as Python, since they contain Python-style object hierarchies (similar to JSON). He can do this one at a time using the View>Syntax Coloring> submenu, but he wants to set a permanent preference for this and can't find a way to do it. Neither could I.

It looks like, in Xcode's way of things, he'd need to make an association between the extension ".gyp" and the UTI "file.text.sourcecode.python". Would he really have to hand-edit Xcode's Info.plist to create this association?
