option + hyphen is called n-dash
option + shift + hyphen is called m-dash

They are so called because they were the width
of the lead slugs carrying an "m" or an "n"
in the days of cast metal typesetting,
and are still very useful typographically today.
If you look closely,
in many fonts you will find
that they are not only a different height
from the base line than the hyphen,
but also have different thickness
and a different shape at each end.
