I'm not aware of ANY scriptable plug-ins for Acrobat - that do this or anything else. There hasn't been much of a market for it, and it's pretty wonky to implement scriptability in Acrobat.

Can anybody lead me to an alternative plugin, or a stand-alone, scriptable
program that'll pull text from either an EPS or a PDF?

Our company (<http://www.digapp.com>) is about to ship a product called PDFText which will extract text from a PDF and the Mac version is scriptable. It is, however, designed for server-side usage and is priced accordingly.
