Having done work for such displays before, there are the
answers to your questions:
1. replace the keyboard and mouse with a keyboard that has
an integrated touchpad, then epoxy that into place, or
place it within a shield that encompasses the edges of the
keyboard. This will prevent the keyboard/mouse from being
taken. If you have to settle for a separate keyboard and
trackball arrangement, make sure the ball for the trackball
can't simply be lifted out (handy souvenir). Whatever you
do, don't use a mouse.
2. To ensure the system can't 'sleep', set the energy saver
control panel to manual override, no sleep, auto-restart
after power failures, and then restart. Once restarted,
erase the energy saver control panel (having a back-up of
it elsewhere, such as the original CD's that came with the
unit).
Final note, put a lexan sheet in front of the screen, and
encase the entire computer inside a stand-alone cabinet
that has a key-access lock from the back. It will save you
a great number of man-hours in removing spilled soft drinks
from the case of the system (and a possible lawsuit from
electrocution).
