The general rule in Mac OS X is "copy your home folder." Anything particular to you is in there somewhere, with the obvious exception of stuff you deliberately put somewhere else. Any application preferences will be somewhere in ~/Library; Mail's spam and filter settings are in ~/Library/Mail.
