I would like to open many Autocad file in illustrator 10.
My question is: How can I open this kind of file with options ? (like
"Adaptation").

open anything -- the file(s) to be opened
[forcing CMYK/RGB] -- choose color space only for documents saved with
multiple color models (pre-Illustrator 9)
[with options anything] -- options for opening a particular type of file

How to know the various options?

You're limited to the options listed in the Open Options Suite. Basically, in AI10 you can only use it to set which page of a PDF is opened.
