I've never heard of "esset" either, the current pronunctiation here in
Germany (in my experience) is ALWAYS eszett (or "ess zed" with English
phonetics). (A German "d" can sometimes be light enough to sound like a "t"
and native German speakers can make a faster smoother transition from an
"s" to a "z" than a typical English speaker, so it may be that it merely
sounded like "esset".

indeed, and, to some extent the "new German" (Neuerechtschreibung) makes
(or tries to make) some accomodations in this respect.
